    • Cook for an additional 2-3 minutes, stirring frequently to prevent burning.

  • Add Tomato Paste and Fresh Tomatoes:
    • Mix in the tomato paste, ensuring it is well combined with the onions and spices.
    • Add the chopped tomatoes and cook until they break down and form a thick sauce, about 10 minutes.

  • Add the Beef:
    • Add the beef cubes to the pot, stirring to coat them evenly with the sauce.
    • Cook for 5-7 minutes until the beef is browned on all sides.

  • Season and Simmer:
    • Add the beef broth or water, ground cardamom, ground cumin, ground coriander, and paprika.
    • Season with salt and pepper to taste.
    • Bring the mixture to a boil, then reduce the heat to low and cover the pot.
    • Let the stew simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors are well developed. Stir occasionally and add more broth or water if needed to maintain the desired consistency.
